Rice Flour

For crepes:

  • 1cup Tres Estrellas Rice Flour
  • 1tbsps Sugar
  • 1tbsps Melted butter
  • 1 tsp Baking powder
  • 2 pieces Eggs
  • 1 cup Milk
  • Oil spray

For the filling:

  • 1½ cups ricotta
  • 1 cup Honey bee

For the sauce:

  • ¼ cup Melted butter
  • ½ cup Brown sugar
  • 1 cup Blackberries
  • 1 piece Lime juice
  • 1 tbsp Orange zest
How To Make It
  • For the crepes, blend all the ingredients and let stand for 20 minutes.
  • Spray oil into the non-stick skillet and pour a spoonful of the batter. Cook on both sides. Stack the cooked crepes and wrap in aluminum foil to keep them from drying out.
  • For the filling, mix the ricotta with honey. Prepare the crepes by filling them with this mixture and shape.
  • For the sauce, heat butter in a frying pan and add sugar. After 4 minutes, add the blackberries, lime juice and zest. Cook for 2 more minutes and pour the hot sauce over the crepes.
  • Garnish with more blackberries and mint leaves.
  • Spread the cream cheese filling
    on a quarter of the crepe.
  • Fold in half and add the blackberry
  • Fold again into a fan shape.
